There’s no dinner I love more on a tired night than one that cooks on a single sheet pan. You heat the oven, crowd a tray with something good, and twenty-some minutes later dinner is done with exactly one pan to wash.

This is a small collection for now, and I’m adding to it as I work out new favorites. Both of these are weeknight staples in my kitchen, with crispy edges and a whole dinner roasting together on one tray.
