A golden baked french toast casserole in a white ceramic baking dish on a folded striped tea towel, the bread cubes puffed and browned at the edges, dusted lightly with powdered sugar and scattered with fresh berries, with a small pitcher of maple syrup beside it in soft morning light.

There are two kinds of mornings in my house: the school-morning kind, where breakfast has about four minutes to happen, and the slow Sunday kind, where the oven gets an opinion. This page covers both. The trick that runs through all of it is doing the thinking the night before, because 7 a.m. is nobody’s most creative hour.

Start with the make-ahead section if your weekdays are the hungry kind, and save the casseroles for a weekend or a houseful. And if you are specifically chasing protein at breakfast, my high protein breakfast ideas go deeper on that.

Make it the night before

The secret to easy mornings is that the work already happened. These four wait in the fridge.
